What is cognac?
Cognac is an amber-colored spirit, a matured kind of brandy that is produced only in the Cognac region of France. Cognacs are usually made from ugni blanc grape wines that are distilled two times, then aged in French oak barrels for at least two years. Most of it is a product of delicately blended eau de vies, thus leading to a spirit that is smoother than whisky, very much more interesting than vodka, yet often misunderstood.
Types of cognac

VSOP stands for Very Superior Old Pale, is slightly older than the VS. They are aged for a minimum of four years and are best enjoyed with cocktails too, or simply by itself.
XO stands for Extra Old, are aged for at least six to ten years. They are normally enjoyed over ice or served neat.
Ultra Prestige is a type of cognac that has been aged for over ten years, and can cost up to several thousands of dollars due to the amount of effort and time that was put into its production. In some cases, they have been aged for a century, thus fetching sky high prices for one bottle of it.
