After the grape skins are separated from the must through a gentle press, the must undergoes dual fermentation. The first fermentation occurs in a stable 18 degrees Celsius environment. Following this, a second fermentation is introduced at 14 degrees Celsius, with an infusion of yeast, before the wine is bottled and stored in a cellar for optimum post-bottling balance.
