A single malt whiskey produced in the Highland Park distillery in the island Orkney, located in the island group in northern Scotland. This is a typical smoky Scottish whiskey, with strong flavors of peat and heather bush. The whiskey is aged for 12 years in barrels that in the past used for aging sherry, a process that gives it sweetness and a honey-like aroma.
The Highland Pack distillery started its operation at the end of the 18th century, and is one of the first distillery in Scotland that obtained a permit to manufacture whiskey. This is the most northern whiskey distillery in Scotland, and it makes a good use of the extreme weather conditions on the island in order to produce unique and top-quality single malts. A common mistake is the attribution of the quote said by Michael Jackson, the famous beer and whiskey critic, about the Highland Park – "the greatest all-rounder in the world of malt whisky", in his book Malt Whiskey Companion – to the deceased famous pop singer.
"Highland Park distillery was founded by Magnus Eunson, a butcher and church officer by day and illicit distiller and whisky smuggler by night. In 1798 he was caught illegally distilling whisky on the site. In 1826, after nearly 30 years later, Highland Park received an official license to distill whisky.
Highland Park uses the local peat, which contains a higher proportion of heather than many other peats. The whisky is aged in sherry casks made of either American or European oak, purchased from Oloroso sherry producers in Spain."
