The Les Cordeliers house, located in the historic cloister of the Cloître des Cordeliers in Saint‑Emilion, has been producing sparkling wines since 1892. Its underground tunnels, maintained at around 12 °C, provide ideal conditions for ageing.
The wines are produced under the AOC Cremant de Bordeaux, which covers the entire Bordeaux vineyard and requires the methode traditionnelle, a second fermentation in the bottle and a minimum period on the lees, similar to Champagne.
Les Cordeliers offers several cuvees, including a non-vintage Brut/Blanc and higher-end bottlings such as the “Exclusive” nd the “Grand Vintage”, depending on the release.
The vineyards for these sparkling wines are generally planted on argilo-limoneux soils in the Entre‑Deux‑Mers region. Grapes are hand-picked, gently pressed, and the wines receive extended ageing on the lees to develop complexity and finesse.
Pale yellow with very fine, persistent bubbles and a lively mousse.
Fresh citrus notes, white‑flesh fruit (pear, peach), white flowers, brioche, hazelnut, subtle almond or biscuit from lees ageing.
Crisp and lively, good backbone of acidity, a clean and slightly mineral finish.
