The Blanc de Blanc is crafted from 100% Chardonnay grapes grown at high elevation, around 900 metres above sea level in the mountainous ridge of the Jerusalem Hills (Judean Mountains/Judean Hills) in Israel. The vines are planted on terra‑rossa soils and chalky terraces, where vine roots dig deep into the rock and are stressed by the harsh environment, yielding concentrated, characterful fruit.
Harvesting is done manually at dawn or during the cool night hours, from the finest plots of the highest‑quality Chardonnay vineyards. After the grapes are harvested, the base wine undergoes six months of fermentation/ageing in stainless steel. Then the second (bottle) fermentation is performed by the traditional Champagne method. After that, the wine rests on its lees in the bottle for approximately six years before disgorgement.
This long ageing on the lees, coupled with the mountain terroir, gives the wine both freshness and complexity: elegance, finesse, and a hint of depth from the ageing, rather than just overt fruitiness.
