They carefully whole cluster pressed the grapes for the Lightly Oaked Chardonnay immediately after harvesting to highlight the fresh flavors and aromas. The juice was cool-fermented in stainless steel tanks at 55°F to further emphasize the fresh fruit character. A small portion of the wine was aged in French oak to impart a smooth texture.
