Inoculated with Alpha yeast followed up with CX9 yeast. Cool ferment to maintain primary fruit characters.
Patial MLF in barrel before being blended prior to bottling.
Bright yellow / green with a golden hue.
Flinty and minerally characters balanced with white peach, lemon curd and jasmine flowers and beautifully complimented with subtle hints of oak from it’s time in barrel.
Balanced between oak influence while still maintaining primary fruit characters mentioned above. Brightness of fruit is brought on by the fresh and bright acid which sits well with the smooth fine texture of the palate.
